A wholegrain rice with a black outer layer, grown in the Camargue. It offers notes of hazelnut and toasted bread, a firm texture and a spectacular colour on the plate. Parboiled, it cooks faster.

Wonderful with scallops, prawns, salmon, green vegetables, or as a coconut milk dessert.
