Winemaking
  1. Night-time machine harvest, destemmed, crushed and put into vats cold
  2. 24-hour cold pre-fermentation maceration
  3. Fermentation at 24 °C for 15 days to bring out the fruit
  4. Gentle extraction, short and regular pump-overs
  5. 10-day malolactic fermentation
  6. Aged in vats for 6 months, filtered before bottling
