Winemaking
  1. Night-time machine harvest, destemmed and crushed
  2. Gentle pneumatic pressing with separation of the juices
  3. Static settling at 12 °C for 36 hours
  4. Fermentation at 17 °C for 21 days
  5. Aged in vats on fine lees for 6 months with regular stirring
  6. Filtered before bottling
